Although I am definitely a huge fan of eggs and they make up the majority of my breakfasts, sometimes I wake up and I just want something else. A bit of “comfort breakfast” if you will. Something that takes me back to when I was little, and ate cereal (gasp!) and didn’t think twice about what was in it. While I’ll readily admit that days of not thinking twice about what I consume are long gone, I can at least make a cereal that is delicious, nutritious, and feels like a total sweet treat – but only sweetened with fruit. This is such a simple recipe but thought I would share just because it’s tricky to find a yummy paleo breakfast alternative that doesn’t involve baking – even most paleo “granolas” involve baking. This is a quick whizz-and-go, raw (extra goodness) breakfast cereal.
Ingredients (serves 4)
- 7 pitted dates
- 2 medium apples, cored and quartered
- 3/4 cup coconut flakes, or shredded coconut
- 3/4 activated walnuts*** (they don’t need to be activated, it just makes them wayyy nicer – and easier to digest)
Throw all ingredients into a food processor and pulse until chunky. Serve with milk of choice – coconut or almond work really well. Enjoy – x.
*** To activate, simply soak overnight with a pinch of himalayan crystal salt and dry in dehydrator or in a very very low oven.
