Amazing Easy Chewy Chocolatey Choc Chip Biscuits

It needs to be a good recipe to go on my blog if I didn’t make it up. These are, in a word, insane. They are SO easy, SO delicious, you could easily fool your non-paleo friends into thinking they are sooo bad for you, but they aren’t. YUM.

3 ¼ cup almond meal

1 teaspoon salt

1 teaspoon baking soda

2 eggs, room temperature

1 teaspoon gluten-free vanilla extract (or regular if you don’t give a damn)

½ cup honey (maple syrup or agave nectar works too)

½ cup coconut oil, melted

1 ½ cups cacao nibs (pure chocolate chips and vegan chocolate chips work too)

    I was very hesistant about making these and whether they would taste okay.

    They are sooooooo good! I made them with whole almonds very roughly ground and added the coconut flour. 6 minutes was perfect as first batch at 8min were a little browner. Both tasted great.

    They had amazing texture with the chunky and ground nuts. Thank you for sharing the recipe.
