White Cacao and Lavender Fudge

I’m so sorry it’s been so long since I’ve posted – I’ve been doing autoimmune which means NO SWEET TREATS which I have not liked… and have deviated from slightly today with these little morsels!! However I’m sort of doing a half baked attempt at autoimmune – anyway I’ll save that for the next post.

In the meantime, I just had to put up a recipe because it’s been so long!! Actually I’ve been over at www.thewebsitestore.net getting my new business up and happening – if you need a website drop me a line! And I’ve been (happily) inundated, to the detriment of this blog. Oh dear.

BUT these White Cacao and Lavender Fudge Pieces will make up for it. I promise.

1 cup of cacao butter melted (can do half coconut oil or even all coconut oil if you’d like them less rich)

2 cups of coconut flakes

three flat tbsp of honey

3/4 cup of almond meal

a head of lavender



Melt the cacao butter first, then add all the other ingredients. Whizz up together in a food processor or Thermomix until smooth or the consistency you prefer. Pour the mixture into a small tray with baking paper under. Sprinkle a few left over lavender petals on top.  Put in the fridge or freezer until set then chop up into squares and leave them to room temperature. Et voila amazingly incredible my new favorite fudge!! Hope you enjoy as much as I do -
