Apologies for the delay between posts – I’ve been so busy, in a good way. Sometimes we are just thrown everything left right and centre but once the rush and panic passes, we emerge just that little bit stronger. Such a cliché – sorry about that. I also had a minor craving for chocolate mousse, and this is the result of those two factors…
This one serves 6 generously -
1/3 cup cacao powder
5 egg whites
1/2 cup raw honey or organic maple syrup (I used honey – I’m going through a honey and chocolate phase)
1/2 cup raw cashews, soaked
4 tbsp to 1/4 cup water
5 tbsp honey or maple syrup
For the mousse: whip the egg whites until stiff peaks form. Blend or process all the other ingredients together until smooth, and the fold in the egg whites. Set in the fridge.
For the cashew cream: blend cashews and honey or maple syrup until smooth. Add a little water until a nice thick smooth consistency. Refrigerate until ready to serve. Enjoy – x.
