Thermomix Zucchini Soup

There is something just so lovely about a good zucchini soup. Even though it’s summer down here, it’s one of my absolute favourite comfort foods  - and a great one because the only ingredients are delicious, nutritious veggies!… Actually the way this recipe came about is quite amusing. I was out and not going to be back before 9pm, and my husband (very kindly) offered to cook dinner – some steamed veggies, he suggested. Well I go through stages with steamed veg – sometimes I love them, and sometimes I am SO sick of them – and this was one of those times. So I suggested a zucchini soup and started giving instructions which really spun him out (Mitch is a very exact person) so I offered to email him a recipe with exact instructions he could follow. This made him much happier!… Anyway, one email and an hour or so later, I arrived home to the most delicious smell – it was absolutely perfect! I may be coming up with more emails in future…

Ingredients

2 onions

2 garlic gloves

3 tbsp olive oil

5 medium zucchinis, chopped into rough pieces

3 tbsp vegetable stock (or two stock cubes)

1/2 cup water

 

Method

Peel onions and halve them and 2 garlic gloves and peel them. Throw into Thermo with 3 tbsp olive oil.
Chop at speed 4 for 6 seconds. Scrape down the sides.

Put the timer on for 10 mins, speed 1, 100 degrees.

When finished scrape down sides, add in roughly chopped zucchini, chop for 10s on speed 4. Add 3 tbsp veggie stock.
Add 1/2 cup water. Time 15mins speed 1 on Varoma.

Then, blend on speed 9 for about 20s and see how thick it is. If very thick add a little of boiling water and blend again until it reaches the desired consistency. Serve with a little coconut cream if desired. Enjoy – x.

    can you do this without a thermomix? Would you have it simmering? and for how long etc?

      Also, it sounds like you’re using premade stock powders/cubes- where in aus do you get ones with good ingredients? I live in NSW and have never seen decent powdered/cubed stock. Only recently have I even seen decent liquid stock around (The Stock Merchant).

        Hi Sophie, yes I make my own vegetable stock (in concentrated liquid form) in the thermomix, or I do make chicken and beef stock on the stove and just reduce it down and freeze it so there’s always some on hand. I agree with you totally – it’s very hard to find one that doesn’t have added sugar or other nasties inside – I do like the stock merchant too. If you wanted to use the liquid stock, you’d just substitute half a cup of stock for the half a cup of water in the recipe. Hope this helps =)

      Yes you could do it without a Thermo. Just use a saucepan but do your own chopping, so finely chop the onion and garlic and throw it in a saucepan with the olive oil and cook over medium heat until soft. Finely chop the zucchini and over a medium-low heat, cook with stock until totally soft. Finally reduce until you’ve got the consistency that you’d like. =)

    I think I may have a different vitamix, it has no temperature gauges.

      Hi Katie, a Vitamix is different to a Thermomix – a Thermomix can cook. But you can follow the steps and then cook in a saucepan, it will be just as good :)
