Mediterranean Baked Rainbow Trout

I’ve never been that much of a fish person – okay, the odd salmon fillet – fine, but it really has to be very delicious for me to like it. So – I felt very proud of myself when I bought these two whole rainbow trout – and was so surprised at how easy they were to cook, and how delicious they were! I threw all the veggies in, and didn’t even do a salad or anything – just baked fish and veg, which was plenty! Unbelievably easy too.



Ingredients (serves 1, just multiply by however many fish/people you have!)

1 medium trout

½ tree onion

juice of ½ orange

4 florets broccoli

½ zucchini

½ carrot


3 tbsp olive oil

12 olives

salt and pepper



Preheat the oven to 200 degrees Celsius. Get a large piece of aluminium foil, large enough to wrap up you fish “parcel” in. Thoroughly rinse the fish in cold water, and place on top of the alfoil. Drizzle on the olive oil and orange juice, and simply chop the rest of the ingredients and throw on top of the fish. Feel free to just add whatever is in your fridge that you think will work – the olives are a great addition and a nice fresh herb – I used parsley. Wrap everything up (if doing multiple fish, you need to wrap each one separately) in the aluminium foil, so there is a little air in there but it is well sealed so the juices and olive oil cannot run.

Cook for half an hour, and let it rest on the bench for ten minutes when still wrapped in the aluminium foil. Transfer onto a plate and serve! Enjoy – x.
