2 Recipes: Chocolate Hazelnut Dripping Sauce & Golden Fried Banana

I have a gorgeous friend who is pregnant and who has been craving Nutella on bread constantly. While I can totally appreciate and relate to the chocolate craving – and I must admit I DID (who didn’t?) love Nutella as a child, I was becoming a tiny bit distressed that she was eating (and not very often – she’s really been very good) food that may not be what we in the paleo community would consider ideal for an unborn child. AND her cravings just reminded me just how good nutella on bread really is, and so I determined to make some. And I have made some for her (Adrianne – I’m at home today – please come and pick it up!! x). And I’m so glad I did, because it’s delicious, and I can see it becoming a bit of a weekend treat.

On that note, a good friend of my husband Mitch grew up in Fiji and introduced us to fried banana last weekend. Oh. My. Goodness – wow – who would have thought? This utterly simple dish is absolute and complete heaven – but don’t take my word for it – just go and make some now. It takes about five minutes and WOW. That’s all I can say. And then Mitch had the amazing brainwave of fried banana and choc hazelnut on paleo bread – yum. I was sold!!! So here you go:

Fried Banana Ingredients:

Banana

Bacon fat (if you really don’t feel like bacon you can use some coconut oil. It will have a slightly different taste but still be delicious)

 

Method

Cook some bacon and set it aside. Then peel the bananas and slice them lengthwise. Cook them over a medium to low heat in the pan until a golden brown, flip and cook on the other side. This will only take 2 – 3 minutes. Serve. Enjoy.

Chocolate Hazelnut Dripping Sauce

Ingredients

250g coconut oil

100g hazelnuts

30g cacao powder

80g liquid sweetener – either raw organic honey or pure maple syrup

 

Method

In a food processor or Thermomix, process the hazelnuts until they become a very smooth butter. Add the rest of the ingredients (the coconut oil should be softened) and process until combined. That is all.
