Paprika Cauliflower Rice

This is just a slightly different version of your basic cauliflower rice. I find that it totally makes you feel as though you’re eating carbs, it’s Whole30 approved and just a plain yummy side to whatever protein you might be having (tonight it was barbecued eye fillet – so good!).

Paprika Cauliflower Rice


Ingredients

1 onion, chopped finely

4 garlic cloves, chopped finely

A small handful of parsley, chopped finely

1 head of cauliflower, grated (on the coarse side of the grater)

2 tsp paprika

1 tsp cayenne powder

6 tbsp olive oil

Method

With olive oil in a pan on medium heat, fry the onion, garlic and parsley together until the onion is well softened. Add the rice, and fry until cooked (5-15 minutes, depending on the size of your pan etc). It will still be white, with a little of the rice looking a light golden colour. Add cayenne and paprika, and stirring with a wooden spoon, fry for another minute.

Serve as a side! Enjoy.

    I have made this twice and it is fantastic. It is my wife’s new favorite thing. FYI, the first time I used the grater, but this time I used the food processor. I was careful to just pulse it so that I didn’t turn the cauliflower into mush. Thanks for the great recipe!

      Thanks Mark, actually yes I’ve now done it in the food processor too, so glad you like the recipe!! I’ll post an update on the recipe and note that as a (much quicker) option!! =)

    I used veg I had already cut up and froze. I used the frozen veg and the food processor method worked wonderfully with it frozen. I would assume this could easily be frozen. Not certain about the texture after with the small texture but I freeze my cauliflower after cleaning znd cutting.
