Raw Paleo Hedgehog
I love hedgehog. What can I say? It takes me back to my teenage years – absolutely the best snack to come home to after school. I was inspired to make this tonight because my dad is (yay!!) doing a pretty strict version of paleo now, and was craving something chocolatey. He’s not having any sweetener of any kind, agave, honey, nothing (which is so good), although a little dried fruit is ok – and this isn’t the kind of slice where you have a piece and want to devour the entire thing. That’s what I love about paleo treats – they actually fill you up à la food!! It’s currently setting in the fridge and I’ll be serving him up a slice soon!
Ingredients:
1 cup almonds
1 cup shredded unsweetened coconut, a little extra for the top
1/2 cup cacao powder
4 dates, chopped
3/4 cup dried apricots, chopped
1/4 cup raisins
1 medium avocado
1/4 cup coconut oil, melted (at less than 40 degrees Celsius)
Method:
Place almonds, coconut and cacao powder into a food processor and process until they are the consistency of a meal, or not quite that fine. Add the rest of the ingredients and process until well combined.
Press firmly into a baking tin lined with baking paper, and top with some shredded coconut.
Refrigerate for a couple of hours until set.

You had me at hedgehog! I would eat it for the name alone. Looks really good (similar to some date balls I make except for the avocado). I gotta quit trolling food blogs because I find too many things to try
